BAKED APPLES W/ RAISINS & DATES - Gluten-Free
- 4 Large Apples (Fuji, Pink Lady, or Honey Crisp)
- 1 cup Pecans
- ½ cup Butter (or Coconut Oil for Paleo/Vegan)
- 3 Medjool Dates
- ⅓ cup Raisins
- 1 tsp Cinnamon
- Sprinkle of Cloves
- ½ tsp Vanilla
- Half and Half or Coconut Cream (optional)
Preheat Oven to 350 degrees. Core apples without going all the way through to make an apple “bowl.”
Mix in a food processor dates, raisins, cinnamon, clove, vanilla, pecans, and butter (or coconut oil). Stuff mixture into cored apples and place in oven for 45-55 minutes until very soft.
Let rest for 5 minutes.
If desired, top with half and half or coconut cream before serving.
