  • 4 Large Apples (Fuji, Pink Lady, or Honey Crisp)
  • 1 cup Pecans
  • ½ cup Butter (or Coconut Oil for Paleo/Vegan)
  • 3 Medjool Dates
  • ⅓ cup Raisins
  • 1 tsp Cinnamon
  • Sprinkle of Cloves
  • ½ tsp Vanilla
  • Half and Half or Coconut Cream (optional)

Preheat Oven to 350 degrees. Core apples without going all the way through to make an apple “bowl.”

Mix in a food processor dates, raisins, cinnamon, clove, vanilla, pecans, and butter (or coconut oil). Stuff mixture into cored apples and place in oven for 45-55 minutes until very soft.

Let rest for 5 minutes.  

If desired, top with half and half or coconut cream before serving.
